  • 1 large Burdock root
  • 30 grams Walnuts
  • 1 Oil for deep frying
  • 2 tbsp Kudzu powder
  • 1 tbsp Water
  • 2 tbsp Mirin
  • 1 tbsp or more Soy sauce

Directions

    Slice the burdock into long, fat shavings.

    They will burn easily if shaved too thin.

    Pan fry them in oil until crisp.

    The heat should be high at first, then reduced to low while slowly frying the burdock shavings.

    Increase to high heat to make it easier to drain the oil.

    Dry roast the walnuts.

    They burn easily, so be careful.

    At this stage, the burdock can be eaten as chips.

    Put the seasoning ingredients in a large sauce pan, stirring in the kudzu powder.
