- 1 large Burdock root
- 30 grams Walnuts
- 1 Oil for deep frying
- 2 tbsp Kudzu powder
- 1 tbsp Water
- 2 tbsp Mirin
- 1 tbsp or more Soy sauce
Directions

1Slice the burdock into long, fat shavings.

2They will burn easily if shaved too thin.

3Pan fry them in oil until crisp.

4The heat should be high at first, then reduced to low while slowly frying the burdock shavings.

5Increase to high heat to make it easier to drain the oil.

6Dry roast the walnuts.

7They burn easily, so be careful.

8At this stage, the burdock can be eaten as chips.

10Put the seasoning ingredients in a large sauce pan, stirring in the kudzu powder.
