  • 3 ounces, weight Unsalted Butter, Softened
  • 3 ounces, weight Granulated Or Caster Sugar, Plus 1 Teaspoon Caster Sugar To Sprinkle On Top
  • 1/2 whole Lemon, Finely Grates Zest
  • 1/2 teaspoons Vanilla Extract
  • 2 whole Large Eggs
  • 3 ounces, weight All-purpose Flour
  • 1/2 teaspoons Baking Powder
  • 1/4 teaspoons Salt

Directions

    1. Preheat the oven to 170°C/325°F. Butter a small loaf tin or small round cake tin.

    2. Beat together the butter, sugar, lemon zest and vanilla until light and fluffy.

    3. Add the eggs and continue beating until combined.

    4. Add the flour, baking powder and salt and fold together until just mixed.

    5. Pour into your baking tin and bake for 45 minutes until gold brown and springs back when you touch it.

    6. Turn out onto a wire rack, sprinkle with caster sugar and allow to cool.
