Madeira Cake With Lemon Icing

Ingredients

  • 1 1/2 cups (225g) wholemeal spelt flour (or flour of choice)
  • 1/2 cup (90g) Natvia
  • 1 1/2 teaspoons baking powder
  • 2 eggs
  • 1/2 cup (160g) apple sauce
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • Icing:
  • 1 cup (200g) Natvia icing mix
  • 2 tablespoons lemon juice

Directions

    Preheat oven to 180C. Grease and line a loaf tin with baking paper.

    In a large bowl, combine the flour, baking powder and Natvia. In a separate bowl, whisk together the eggs, apple sauce, milk and vanilla.

    Make a well in the centre of the dry ingredients, and add the wet, whisking to combine.

    Pour batter into prepared pan. Bake for 35-45 minutes until a skewer inserted comes out clean. Transfer to a wire rack to cool.

    To make the icing, combined Natvia icing mix and lemon juice in a small bowl. Once cake is cooled, drizzle over the lemon icing.
