Ingredients
- 1/2 c. chopped green pepper
- 1 garlic clove, minced
- 1 Tbsp. butter
- 1 (14 1/2 oz.) can whole tomatoes, drained
- 1/2 tsp. dried thyme leaves
- 1/2 lb. Velveeta cheese spread, cubed
- 1/2 c. chopped onion
- 1 to 2 tsp. curry powder
- 4 boneless chicken breasts (1-inch cubes)
- 1 tsp. lemon juice
- 1/8 tsp. black pepper
Directions

1Cook and stir bell pepper, onion, garlic and curry powder until vegetables are crisp and tender.

2Add chicken; cook and stir 5 minutes or until chicken is no longer pink.

3Stir in tomatoes, juice, thyme and black pepper.

4Reduce heat to low; simmer 5 minutes.

5Add Velveeta spread.

6Stir until melted.

7Serve over cooked rice, if desired.
