  • 3 Eggs, Separated
  • 1/4 teaspoons Salt
  • 1-1/4 cup Sugar
  • 1 cup Sunflower Oil
  • 1/2 cups Milk
  • 1 Tablespoon Grated Orange Or Lemon Zest
  • 2-3/4 cups Self-rising Flour, Sifted

Directions

    Preheat oven to 350°F. In a bowl, whisk egg whites with salt until stiff peaks form. Gradually stir in egg yolks a little bit at a time with a wooden spoon. Add sugar, oil, milk, orange zest and ending with sifted flour.

    When all the ingredients are incorporated, half fill cupcake liners with batter and place on a large baking sheet. Bake 18 to 25 minutes until golden brown. Remove from the oven and transfer cakes in their baking cups to wire racks to cool.
