Maine Baked Beans

  • 1 lb. dry beans (2 c.)
  • 2 Tbsp. molasses
  • 1 tsp. salt
  • dash of pepper
  • 1 heaping tsp. dry mustard
  • 1/2 lb. piece salt pork
  • 1 medium onion, peeled (left whole)

Directions

    Wash beans and soak overnight.

    Need large bowl as beans will swell.

    Next morning, place drained beans in crock-pot.
  4. 4
    Bury onion and score salt pork (make gashes in it).

    In beans, add salt, pepper, dry mustard and molasses.

    (Be careful not to add too much molasses, as will make beans hard.)

    Cover with boiling water and cook on high in crock-pot all day.
