    in mixing bowl whisk eggs, milk and salt until smooth

    add one of the Optional Combnations below and divide all evenly among tins

    Bake in lightly coated/ sprayed 8 bin muffin tin for 30 minutes at 350 until puffed and golden on bottom

    Option One: Salsa ans Sausage Cups > 6 oz frozen shredded hash browns, thawed + 3 oz dried chorizo , 1/4 cup fresh salsa, 1/2 tsp black pepper.

    Option Two: Apple French Toast Cups > 1 large sandwich roll, diced, 1/2 apple diced (about 3/4 cup), 3 T raisins, 1/4 cup heavy cream. 3 T sugar. 1/2 tsp cinnamon.

    Option Three: Salmon and Dill Cups > 3 oz smoked salmon into bite size pieces, 3 oz Neufchatel cheese (or 1/3 less for cream cheese), 1/4 cup fresh chopped dill, 1/2 tsp black pepper.

    Option Three: Parisian Ham and Cheese Cups > 1 large croissant, diced (about 1 1/4 cups) 3 oz diced deli ham, 3 ox gruyere cheese, grated, 1/4 tsp nutmeg, 1/2 tsp black pepper.
