- 3 lb. medium potatoes, peeled (9)
- 1 1/2 c. sour cream
- 4 Tbsp. butter
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. packaged bread crumbs
- 1 Tbsp. melted butter
Directions

1Cook potatoes in boiling water until tender; drain.

2Combine potatoes, sour cream, butter, salt and pepper in a large bowl. Beat on low until light and fluffy.

3Pile lightly into a buttered 2-quart casserole.

4Cover and refrigerate overnight.

5Bake covered at 325° for 1 hour.

6Toss bread crumbs in 1 tablespoon butter. Sprinkle over potatoes.

7Continue baking uncovered for 30 minutes more.
