  • 1 c. chopped, well drained spinach
  • 1 1/2 c. Ricotta cheese
  • 1 c. fine bread crumbs
  • 2 eggs, well beaten
  • 1/2 c. Parmesan or Romano grated cheese
  • 1/4 c. minced green onion
  • 1 tsp. sweet basil
  • 1/4 tsp. nutmeg
  • 1 crushed clove garlic
  • flour
  • meat sauce (homemade or store bought)

Directions

    Mix first 9 ingredients and roll into fingers, then into flour.

    Place on a cookie sheet and chill until very cold.

    In a skillet bring several inches of water to a rolling boil.

    Place fingers into water and leave until they come to the top.

    With a slotted spoon, remove from water.

    Serve them with meat sauce covering.
