- 4 cups canola oil
- 2 cups pecan halves
- 1 tablespoon unsalted butter
- Pinch of cayenne pepper, or to taste
- Coarse salt and freshly ground black pepper
Directions

1Line a plate with paper towels and set near the cooktop.

2In a large, heavy-bottomed pot, heat the oil over medium heat until the oil reaches 350F on a deep-fat thermometer.

3Carefully add the pecans and cook until the color deepens, 2 to 3 minutes.

4Using a slotted spoon, transfer to a large bowl.

5While the nuts are still hot, add the butter and cayenne and stir to combine.

6Season with salt and pepper.

7Transfer to the prepared plate to drain.

8Once the nuts have cooled, store in an airtight container in the refrigerator for up to 2 weeks.
