Ingredients
- 1 pound Pasta (your Favorite)
- 1/4 cups Olive Oil Or Butter
- 1 whole Onion, Medium, Chopped
- 3 cloves Garlic, Minced
- 3/4 cups Vodka (not Too Inexpensive)
- 6 whole Tomatoes, Small, Diced Finely
- 1/2 teaspoons Cayenne Pepper
- 2 Tablespoons Parsley, Fresh, Chopped (3 Tsp Dried Is Fine
- 1 Tablespoon Basil, Dried
- 1/4 teaspoons Oregano, Dried
- 1 pound Shrimp, Medium, Frozen, Cooked
- 1 cup Cream, Heavy Whipping

2Cook pasta in boiling salted water until done (follow package instructions).

3Drain.

4In a large skillet, heat oil or butter over medium heat.

5Cook onion and garlic in oil; stir, cooking until soft.

6Add vodka.

7Simmer until almost all liquid is gone, about 15-20 minutes.

8Add tomatoes, cayenne and herbs.

9Simmer for another 10 minutes.

10Add peeled shrimp and simmer 5 minutes.

11Slowly stir in cream and heat for 3 minutes.

12Add Sea Salt and White Pepper, to taste.

13Serve sauce over pasta with fresh salad and warm, crusty bread.

14Letting this sauce sit awhile will allow the flavors to meld and it to thicken.

15It is actually better the next day!

16I double the recipe except for the cream.

17Be careful not to make the sauce too liquidy.
-
18Add cream in 1/4 cup increments, to taste.

19Also good over brown rice.

21If you use a cheap vodka, there is more water to it than a little bit better brand and the sauce is not as good.

22If you keep the bottle in the freezer, it should NOT freeze but should remain liquid.

23Rule of thumb for dried herbs versus fresh herbs is 1 to 3.

24You want one third the amount of dried as the amount of fresh that is called for.

25If you dont like cooked tomatoes, then substitute a large can of tomato puree.
