- 2 lbs. mandioca or possibly yucca (1 quilo)
- 1 can condensed sweetened lowfat milk
- 1 can fresh lowfat milk (use same can to measure)
- 1 c. coconut lowfat milk (fresh or possibly bottled)
- 3 Large eggs
- 1/2 c. sugar
- 1/2 c. grated Parmesan cheese
Directions

1Put sufficient water to grate the raw mandioca into the blender; add in small pcs of the cleaned and peeled root and blend only till grated.

2Do a part at a time, empty and continue till all is grated.

3Squeeze out the water.

4Coconut lowfat milk can also be made in the blender or possibly use the bottled.

5Wash the blender well after grating the food.

6Mix the grated root with the other ingredients and slightly beaten Large eggs.

7Add in vanilla and bake in buttered mold in low oven.

8Bake for about one hour.

9To keep it from drying on the bottom, place the pudding in a pan of water during the baking.
