Ingredients

  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 c. white sugar
  • 1/2 c. walnuts, chopped
  • 3 eggs
  • 1 tsp. vanilla
  • 1/2 c. oil
  • 2 c. mango, chopped fine

    Sift dry ingredients together.

    Add nuts and mix well.

    Make a well in the dry ingredients. Beat eggs.

    Add vanilla and oil.

    Mix well.

    Add egg mixture into the well.

    Stir just enough to moisten.

    Add mango; mix well.

    Pour into greased loaf pan and let ingredients stand for 20 minutes before baking. Bake at 350° for 1 hour or until knife comes out clean.
