- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 c. white sugar
- 1/2 c. walnuts, chopped
- 3 eggs
- 1 tsp. vanilla
- 1/2 c. oil
- 2 c. mango, chopped fine
Directions

1Sift dry ingredients together.

2Add nuts and mix well.

3Make a well in the dry ingredients. Beat eggs.

4Add vanilla and oil.

5Mix well.

6Add egg mixture into the well.

7Stir just enough to moisten.

8Add mango; mix well.

9Pour into greased loaf pan and let ingredients stand for 20 minutes before baking. Bake at 350° for 1 hour or until knife comes out clean.
