*Mango Chutney*

Ingredients

  • 6 lb. mangos (about 26 large mangos, or about 12 cups), chopped or put through grinder course
  • 5 lb. brown sugar
  • 3 pt. vinegar
  • 2 c. water
  • 1 c. ginger, finely chopped
  • 1 c. onion, finely chopped
  • 1 doz. small Hawaiian chili peppers, without seeds
  • 6 doz. whole Hawaiian chili peppers
  • 3 Tbsp. salt
  • 3 cloves garlic, finely chopped
  • 1 lb. seedless raisins, chopped
  • 1 lb. seeded raisins, whole

Directions

    Combine vinegar, water, salt and sugar in a large pot and bring to a boil.

    Add onions, raisins, garlic and ginger and bring to a boil again.

    Add mangos and chili peppers and bring to a boil.

    Cook for 20-30 minutes until mangos look clear or glassy. Gently stir mixture occasionally to avoid sticking to the bottom of the pot.

    Remove from heat, place mixture in hot sterilized jars and seal immediately.
