Ingredients
- 3 14 cups mangoes, fresh, peeled and chopped into 1/2-inch cubes
- 2 12 cups white sugar
- 1 cup brown sugar, packed
- 1 cup apple cider vinegar
- 12 cup raisins
- 14 cup ginger, fresh grated
- 2 tablespoons garlic, minced
- 2 tablespoons salt
- 1 teaspoon ground cloves
- 12-1 teaspoon hot pepper, from a jar finely chopped
Directions

1Make sure mangos are not too ripe or soft.

2They're easier to peel.

3Put into a large bowl; add sugars and stir well until sugars liquify.

4Cover and let set on counter overnight.

5Pour into a large saucepan and add the rest of ingredients.

6Stir well.

7Bring to a boil, then reduce heat to a simmer.

8Let simmer, stirring occasionally, 45 minutes or longer, or until as thick as gravy.

9Pour into clean jars, (should make about 1 quart and a cup extra), and keep refrigerated.

10Will keep months.
