Mango with Ginger-Mint Syrup

- 1 cup water
- 1/2 cup sugar
- 1 (2-inch) piece fresh ginger, thinly sliced
- 1/4 cup packed fresh mint leaves
- 2 ripe mangoes, peeled, pitted, and thinly sliced
- Ginger or vanilla ice cream, or vanilla yogurt, for serving
Directions

1Bring water and sugar to a boil in a saucepan and cook until sugar is melted, stirring occasionally.

2Add the ginger and cook for 1 minute.

3Remove from the heat, stir in the mint and steep for 5 minutes.

4Place the mango in a bowl, strain the syrup mixture over the mango, cover, and let chill in the refrigerator for 30 minutes.

5Serve over ice cream or topped with vanilla yogurt.
