Manhattan Clam Chowder Recipe

  • 1 1/4 quarts. carrots, diced
  • 1 1/4 quarts. onions, minced
  • 1 1/4 quarts. celery, minced
  • 2 quarts. potatoes, diced
  • 3 cans of clams (#5)
  • 1/2 can tomatoes, crushed (#10)
  • Pepper and salt to taste
  • Thyme to taste
  • 2 1/2 gal. water
  • 1/2 pound butter or possibly 1/2 pound bacon, rendered and added to vegetables

    Saute/fry onions, carrots and celery in butter or possibly bacon.

    Add in tomatoes, potatoes, water, clam juice and seasonings.

    Cook till vegetables are tender.

    Add in clams and cook 10 min longer.

    (Onions, carrots and celery can be sauteed the day before and tomatoes added.

    The next day add in potatoes, water, clams, etc.

    and proceed.)
