Manicotti With Spinach

- 2 c. Ricotta cheese
- 3/4 c. freshly grated Parmesan cheese
- 1 c. shredded Mozzarella cheese
- 2 eggs
- 10 oz. pkg. frozen spinach, thawed and well drained
- salt and freshly ground pepper to taste
- 1 tsp. minced garlic
- 14 manicotti shells
- 3 c. spaghetti sauce
Directions

1Preheat oven to 350°.

2Combine Ricotta cheese with 1/2 cup Parmesan cheese, the Mozzarella cheese, eggs, spinach, salt, pepper and garlic.

3Blend well.

4Cook manicotti shells al dente. Drain.

5Fill with spinach mixture.

6Place in baking dish and cover with spaghetti sauce.

7Sprinkle remaining 1/4 cup Parmesan cheese over top.

8Bake for 25 to 35 minutes, until heated through and bubbly.
