  • 85 grams Cake flour
  • 5 grams Baking powder
  • 1 tsp Cinnamon
  • 1 dash Nutmeg
  • 1 Carrot
  • 2 tbsp Raisins
  • 2 tbsp Walnuts
  • 1 Egg
  • 20 grams Sugar
  • 20 grams Maple syrup
  • 25 grams Olive oil

    Sift together the dry ingredients.

    Finely mince the carrots in a food processor, then roast and rough chop the walnuts.

    Use a whisk to blend the egg, sugar, and maple syrup.

    Add the carrot, raisins, and walnuts and stir.

    Add the olive oil and stir.

    Pour into a pound cake mold lined with parchment paper and bake for 40 minutes in an oven preheated to 180C.
