Maple Cranberry Nut Bread

  • 1 cup boiling water
  • 1 cup dried cranberries, chopped
  • 1 tablespoon butter
  • 1 egg
  • 1/2 cup maple syrup
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon salt

    Preheat oven to 350. Grease a loaf pan.

    Place dried cranberries and butter in a mixing bowl. Pour boiling water over and stir until butter melts. Allow to cool slightly, then add egg, maple syrup, and walnuts.
