Maple-Glazed Roasted Carrots

  • 4 cups Carrots, Peeled, Cut In Half Lengthwise, And Cut In Thirds (should Be Roughly Equal-sized Pieces)
  • 1 Tablespoon Butter Or Margarine (double This Amount If You Want To Add A Bit To The Carrots When Done)
  • 2 Tablespoons Maple Syrup
  • 1/4 teaspoons Black Pepper

    Preheat oven to 425 F. Line a rimmed baking sheet with aluminium foil and spray with cooking spray; set aside.

    Prep your carrots as specified above. You want the carrot pieces to be roughly the same size. Add carrots into a bowl; set aside.

    In a microwave safe bowl, add half of the butter and the maple syrup and microwave for 15 seconds or until butter has melted and liquid has warmed. Pour mixture over carrots. Mix until the carrots are covered with the maple syrup mixture. Place carrots on the baking sheet and sprinkle with pepper.

    Roast for 10 minutes then flip the carrots and cook for 5 to 10 minutes longer or until carrots are fork tender. Note: Cooking time depends on how thick you cut your carrots. The thicker they are, the longer it will take to cook.

    Place carrots in a serving bowl and if desired, add additional butter while the carrots are still warm.
