Maple Tofu Pudding

Ingredients
- 12 -14 ounces soft tofu
- 1/4 cup corn oil
- 1/3 cup maple syrup or 1/3 cup pancake syrup
- 1 pinch salt
- 1/4 teaspoon vanilla extract
- 1/4 cup walnuts (optional) or 1/4 cup black walnut, finely chopped (optional)
Directions

1Drain the tofu and cut it into small pieces.

2Place the pieces in a blender.

3Add the oil, maple syrup, salt and vanilla. Put the lid on the blender.

4Process the mixture for a minute or two, or until the pudding is quite smooth.

5If necessary, turn off the blender, and scrape down the sides of the blender jar.

6Then put the lid back on and process some more.

7When the mixture is smooth, turn it into 4 small, resealable, half-cup containers.

8Chill until serving time, or serve right away if desired.

9If you like, you can sprinkle a tablespoon of finely chopped walnuts on top of each serving of pudding.

10I prefer black walnuts, but any type will do.
