Maple Walnut Chiffon Cake

- 2 c. flour
- 3 tsp. baking powder
- 1 tsp. salt
- 2 c. brown sugar
- 1/2 c. oil
- 7 eggs, separated
- 3/4 c. cold water
- 2 tsp. maple flavoring
- 1 tsp. vanilla
- 1/2 tsp. cream of tartar
Directions

3Mix flour, baking powder and salt.

4Stir in with fork the brown sugar.

5Make a well and add oil, egg yolks, cold water, maple flavoring and vanilla.

6Beat until smooth.

7Beat egg whites and cream of tartar until it holds very stiff peaks. Pour first mixture over egg whites in thin stream.

8Fold gently; this is very important.

9One cup of finely chopped nuts may be added last.

10Bake at 325° for 65 to 70 minutes.
