Marinated Bean Salad

Ingredients

  • 1 can (15 Oz. Size) Black Beans
  • 1 can (14 Oz. Size) Cut Green Beans
  • 1 can (15 Oz. Size) Chickpeas
  • 3 Tablespoons Red Onion, Diced
  • 1/3 cups White Vinegar
  • 1/3 cups White Sugar
  • 1/4 cups Olive Oil
  • 1 dash Salt
  • 1 dash Pepper

Directions

    Open, rinse, and drain cans of beans and throw them into a bowl. Throw the onion into the bowl. The more you add the more of a kick the salad will have.

    In a small bowl mix the remaining ingredients. Pour sauce onto beans and mix.

    Let marinate in the fridge for at least an hour or two. I find that marinating the salad in a Ziploc allows me to move it around every once in a while to make sure that everything gets evenly coated. Lasts for about a week and tastes better the longer it sits in the marinade!

    Please don't skimp on the sugar or you will end up with a bowl of beans that taste like vinegar!!
