Marinated Beef Kabobs

Ingredients
- 1 small orange (about 6 oz.)
- 1/2 lb. beef cubes
- 8 medium mushrooms
- 8 medium scallions, cut into 2-inch pieces
- 1/2 c. orange juice (no sugar added)
- 1 Tbsp. each: teriyaki sauce and dry sherry
- 1 tsp. Dijon style mustard
- 2 garlic cloves, minced
- 1 tsp. honey
- dash of pepper
- 1 tsp. cornstarch
Directions

1Using small holes of hand grater, grate orange peel.

2Cut orange into quarters.

3In medium glass or stainless steel mixing bowl, combine orange quarters, orange peel, beef, mushrooms and scallions.

4In a 1-cup liquid measure, combine remaining ingredients, except cornstarch.

5Add to beef mixture; toss to coat.

6Cover; refrigerate at least 3 hours or overnight.
