Marinated Carrots

  • 2 lb. carrots
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. white sugar
  • 1 can tomato soup
  • 3/4 c. vinegar
  • 1 onion
  • 1 green pepper

Directions

    Slice carrots and cook until slightly crisp.

    Do not overcook. Cool.

    Put salt, pepper, sugar, tomato soup, oil and vinegar in mixer and beat 5 minutes.

    Pour over carrots.

    Add onion and green pepper sliced paper thin.

    Marinate overnight.

    Store in glass jar in refrigerator.

    Keeps 2 weeks or more.

    When carrots are gone, use the liquid on salads.
