Marinated Carrots

  • 2 lb. sliced carrots
  • 1 medium sliced onion
  • 1/2 medium sliced green pepper (more if desired)
  • 10 3/4 oz. can tomato soup
  • 1/2 c. vinegar
  • 1/2 c. oil
  • 3/4 c. sugar
  • 1 tsp. prepared mustard

Directions

    Cook and drain carrots (still firm).

    Add onion and green pepper.

    Combine soup, vinegar, oil, sugar and mustard.

    Mix well. Pour over carrots, toss lightly.

    Refrigerate overnight.
