Marinated Carrots

  • 5 c. carrots, cut to desired size (2 lb.)
  • 1 tsp. prepared mustard
  • 3/4 c. sugar
  • 1 can tomato soup
  • 1 c. chopped peppers
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. oil
  • 3/4 c. vinegar
  • 1 c. chopped onion

Directions

    Boil carrots for 5 minutes; drain and cool.

    In medium bowl, put salt, pepper and mustard.

    Beat in a little of the oil to blend with mustard.

    Add the remainder of the oil, sugar, vinegar and soup.

    Beat until mixed.

    Add onion, peppers and carrots. Cover tightly and chill.
