- 2 lb. carrots
- 1 c. tomato juice
- large onion (green, if desired)
- 3/4 c. vinegar
- 1 tsp. dry mustard
- 1 c. sugar
- 1/2 c. Wesson oil
Directions

1Peel, slice and cook carrots until tender, drain and cool. Slice onions; mix well with carrots.

2Mix mustard and sugar together.

3Stir in oil, vinegar and tomato juice.

4Pour over carrots and onions.

5Cover and let stand 24 hours in refrigerator.
