Marinated Carrots

Ingredients

  • 1 lb. carrots
  • 1 green pepper
  • 1 sliced onion
  • 1 (8 oz.) can whole corn
  • 1/2 c. vinegar
  • 1/2 c. cooking oil
  • 1/2 c. sugar
  • 1 can tomato soup (or 3 Tbsp. catsup)
  • 1 Tbsp. dry mustard
  • 1 Tbsp. Worcestershire sauce

Directions

    Clean and block carrots; cut peppers and onions and cook with carrots in salt water 10 minutes (until tender).

    Bring to boil vinegar, oil and sugar; add tomato soup, dry mustard and Worcestershire sauce and pour over drained carrots and corn.

    Cook slowly just long enough to stir about 3 or 4 minutes.

    Store in refrigerator.

    Keeps indefinitely.
