  • 3 1/2 c. cooked carrots, sliced
  • 1 small onion, cut round
  • 1 green pepper, cut round
  • 1/2 tsp. salt
  • 3/4 c. vinegar
  • 1/4 c. oil
  • 2/3 c. sugar

Directions

    Cook carrots until tender.

    Drain.

    Combine all ingredients with the drained carrots and refrigerate overnight.

    This keeps well 3 to 4 weeks in the refrigerator.
