Marinated Carrots

  • 2 lb. carrots
  • 1 green pepper, chopped
  • 1 small jar cocktail onions
  • 1 can tomato soup
  • 3/4 c. vinegar
  • 1/2 c. salad oil
  • 1 tsp. mustard
  • 1 c. sugar
  • salt and pepper to taste

Directions

    Peel and slice carrots.

    Cook in salted water until just tender.

    Drain well.

    Add peppers and onions to carrots.

    Mix together soup, salad oil, vinegar, mustard, sugar, salt and pepper.

    Pour over carrots while warm.

    Put in refrigerator and marinate at least 2 or 3 days.

    Drain marinade and serve cold.
