  • 3 lb. small mushrooms (whole)
  • 1/2 c. olive oil
  • 1/2 c. red or balsamic vinegar
  • 1 medium onion, chopped fine
  • 1 tsp. parsley
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder or crushed clove

    Wash mushrooms and drain.

    Put all other ingredients in saucepan.

    Mix to blend.

    Heat to boiling.

    Add mushrooms.

    Cover and boil for 5 minutes.

    Leave covered until cool.

    Refrigerate overnight.
