- 1/3 c. good olive oil
- 1/3 c. red wine vinegar
- 2 Tbsp. brown sugar
- 1 1/2 tsp. Coleman's dry mustard
- 10 whole peppercorns
- pinch of salt
- 1 lb. small, cleaned mushrooms
- 1 sprig fresh oregano
Directions

1Choose small, bite-size mushrooms for this dish.

2Combine the first 6 ingredients in a small saucepan.

3Heat gently until the sugar dissolves.

4Add the mushrooms and continue to heat for about 5 minutes, but do not boil.

5A small sliced onion could also be added at this point.

6Let the mixture cool; add the sprig of oregano, then refrigerate for at least a day to let the flavor marry.

7Makes about 3 cups.
