Marinated Mushrooms

  • 2 lb. small mushrooms
  • 3/4 c. olive oil
  • 3 cloves garlic, peeled and thinly sliced
  • juice of 2 lemons
  • 2 Tbsp. white wine vinegar
  • 2 bay leaves
  • 1 sprig fresh parsley
  • 1/2 tsp. thyme
  • 6 peppercorns

Directions

    Clean mushrooms and trim mushroom stems.

    Cut mushrooms in half or one quarter the larger ones.

    Heat oil in a large skillet. Add all ingredients (except parsley for garnish).

    Simmer the mixture for 2 to 3 minutes.

    Remove from heat, cover and let mushrooms cool in liquid.
