- 2 lb. small mushrooms
- 3/4 c. olive oil
- 3 cloves garlic, peeled and thinly sliced
- juice of 2 lemons
- 2 Tbsp. white wine vinegar
- 2 bay leaves
- 1 sprig fresh parsley
- 1/2 tsp. thyme
- 6 peppercorns
Directions

1Clean mushrooms and trim mushroom stems.

2Cut mushrooms in half or one quarter the larger ones.

3Heat oil in a large skillet. Add all ingredients (except parsley for garnish).

4Simmer the mixture for 2 to 3 minutes.

5Remove from heat, cover and let mushrooms cool in liquid.
