Marinated Rice Salad

Ingredients

  • 1 c. uncooked converted rice
  • 1/2 c. Italian dressing
  • 1 Tbsp. soy sauce
  • 1/2 c. chopped celery
  • 1/2 c. chopped scallions
  • 2 c. fresh spinach
  • 1 can water chestnuts, chopped
  • 10 oz. box frozen peas, slightly thawed

Directions

    Cook rice.

    Add dressing and soy sauce and refrigerate overnight.

    Three hours before serving, add rest of ingredients. Toss and refrigerate.

    Can be doubled or tripled.
