- 1 c. uncooked converted rice
- 1/2 c. Italian dressing
- 1 Tbsp. soy sauce
- 1/2 c. chopped celery
- 1/2 c. chopped scallions
- 2 c. fresh spinach
- 1 can water chestnuts, chopped
- 10 oz. box frozen peas, slightly thawed
Directions

1Cook rice.

2Add dressing and soy sauce and refrigerate overnight.

3Three hours before serving, add rest of ingredients. Toss and refrigerate.

4Can be doubled or tripled.
