- 1 7 oz. jar marinated artichokes
- 1 1/3 c. Italian lowfat dressing
- 1 c. cauliflower pieces
- 1 c. broccoli pieces
- 2 carrots, sliced
- 1 bell pepper, sliced
- 8 oz. fresh mushrooms, whole
- 1 med. cucumber, sliced
Directions

1Mix all together and store in a covered dish overnight, or a few hrs. I add sliced onions and another jar of marinated artichokes.

2Recipe is good with any combination of fresh vegetables you like.

3Mushrooms and onions are better added the day you serve.

4Lasts several days.

5Drain and reserve marinade when serving.

6Store in refrigerator.
