Marinated Shrimp

Ingredients

  • 1 1/4 c. Wesson oil
  • 3/4 c. white vinegar
  • 2 tsp. salt
  • 2 tsp. celery seed
  • 1 bottle capers with juice
  • dash of Tabasco
  • 7 to 8 bay leaves
  • 1/2 c. granulated sugar (optional)
  • 3 to 4 thinly sliced medium onions
  • 1 large jar button mushrooms
  • 2 jars artichoke hearts
  • 4 lb. cooked, peeled shrimp

Directions

    Bring to a boil the first 7 ingredients and sugar if desired. Cool and remove bay leaves.

    Add onions, mushrooms and artichoke hearts.

    Combine all; add shrimp.

    Marinate for 24 hours, longer is better, turning or stirring several times.
