Ingredients

  • 4 to 5 c. coarsely cut tomatoes
  • 1/4 c. vinegar
  • 1/3 c. olive oil
  • 2 cloves minced garlic
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. basil
  • 1 Tbsp. parsley
  • 1 Tbsp. cilantro (optional)
  • 1 tsp. Dijon mustard

Directions

    Toss tomatoes with all other ingredients and marinate in refrigerator.

    Serve over lettuce, over pork or veal cutlets, linguini with olives or garlic toast with Mozzarella cheese. Brush on fish fillets as a marinade, then serve tomatoes on the side.

    Or, add onions and chili peppers and use as salsa.
