Ingredients
- 1 cup fresh lemon juice
- 3/4 cup pure maple syrup
- 1/2 cup corn oil
- 6 shallots mediums, thinly sliced
- 6 garlic cloves thinly sliced
- 4 thyme sprigs Fresh
- 3 bay leaves Imported
- 2 teaspoons grated lemon zest Finely
- 1 teaspoon freshly ground black pepper
- 10 pounds turkey
Directions

1Combine all the ingredients except the turkey in a sturdy 2 gallon plastic bag.

2Add the turkey to the bag, squeeze out as much air as possible and seal the bag.

3Distribute the marinade evenly over and inside the turkey.

4Set the turkey, breast side down, in a bowl in the rfrigerator and marinate for 24 hours, turning occasionally.

5Wipe the shallots and garlic from the turkey before cooking and pat dry.

6Roast as normal. Strained marinade can be used in the gravy if desired.
