  • 4 c. assorted fresh vegetables
  • 1/4 c. lemon juice (from concentrate)
  • 1/4 c. vegetable oil
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. oregano or thyme
  • 1/8 tsp. pepper

Directions

    Place vegetables in shallow dish. Combine remaining ingredients.

    Pour over vegetables. Cover and place in refrigerator for 6 hours.
