Ingredients

  • 2 carrots, cut into sticks
  • 1 c. broccoli flowerets
  • 1 c. cauliflowerets
  • 1 medium cucumber, sliced
  • 1 medium zucchini, sliced
  • 1 small onion, sliced and separated into rings
  • 1 c. vegetable oil
  • 1/2 c. white wine vinegar
  • 1 tsp. oregano leaves
  • 1 tsp. salt or to taste
  • 1/4 tsp. pepper
  • 2 tsp. sugar
  • 1 tsp. dry mustard

Directions

    Cook carrots in small amount of water in covered saucepan over low heat for 2 minutes. Add broccoli and cauliflower.

    Bring to boiling.

    Reduce heat and simmer 3 minutes longer.

    Drain. Combine all vegetables. Combine oil, vinegar and seasonings.

    Pour over vegetables. Cover and chill at least 8 hours, stirring occasionally.
