Marinated Veggie Salad

Ingredients

  • 1 1/2 c. shell macaroni
  • 2 c. broccoli flowerets
  • 1 1/2 c. cauliflower flowerets
  • 1 c. sliced fresh mushrooms
  • 16 oz. can artichoke hearts, drained, rinsed and chopped
  • 1 c. sliced pitted ripe olives
  • 1/2 c. green onion, chopped
  • 2/3 c. Italian salad dressing
  • 1 medium avocado, seeded, peeled and sliced
  • 1 medium tomato, seeded and chopped

Directions

    Cook macaroni according to package directions.

    Drain and rinse with cold water.

    Drain well.

    In a large bowl, combine macaroni, broccoli, cauliflower, mushrooms, artichoke hearts, ripe olives and green onions.

    Toss with Italian dressing and cover. Chill several hours.

    At serving time, toss vegetable mixture with avocado and tomato.
