- 1 c. flour
- 1 c. cornmeal (yellow)
- 4 tsp. baking powder
- 1/4 c. sugar
- 3/4 tsp. salt
- 1/4 c. soft shortening
- 2 eggs
- 1 c. buttermilk
Directions

1Sift together flour, cornmeal, baking powder, sugar and salt. Add shortening.

2Mix well.

3Add eggs and buttermilk.

4Heat 1 tablespoon oil in large skillet; sprinkle with cornmeal on the bottom.

5Pour in batter.

6Bake for 20 to 25 minutes or until golden brown at 425°.
