Masala Chai

Ingredients

  • 1 cup milk fresh
  • 1 cup water
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon ground clove
  • 16 cardamom pods
  • 2 cinnamon sticks broken/crushed
  • 1 piece ginger broken into 1-inch thick chunks
  • 2 teaspoons loose leaf tea black, OR 1 teabag of black tea, e.g. assam
  • 3 teaspoons honey OR brown unrefined sugar, e.g. muscovado

Directions

    Combine the water and milk in a pan and put on medium-high heat.

    When it just about gets to boiling point, reduce to medium-low and throw in everything except the loose-leaf tea/teabag and the sugar/honey.

    Keep stirring and make sure it does not do anything more than simmering, for about 15min.

    Add the tea and sugar/honey, stir well and keep on the heat for another 5min.

    Take off the heat, filter the solids (ginger, cardamom, etc) out of the tea and serve in mugs or bowls.
