Ingredients
- 3 c. carrots, peeled and cut into 1-inch chunks
- 4 Tbsp. water
- 2 Tbsp. butter, softened
- 2 Tbsp. brown sugar
- 1/2 to 1 tsp. salt
- dash of ground pepper
- dash of nutmeg
- 3 Tbsp. chopped parsley or 1 Tbsp. fresh thyme or marjoram leaves
Directions

1Place carrots in a microsafe baking dish with 4 tablespoons water.

2Cover with plastic wrap.

3Microwave on High power for 10 minutes or until tender.

4In a food processor or blender, puree carrots.

5Add butter, brown sugar, salt, pepper and nutmeg to carrots.

6Mix until very smooth.

7Add parsley, thyme or marjoram. Pour carrot puree into a microsafe baking dish.

8Microwave on High power for 6 to 8 minutes or until hot.

9Serve with beef or chicken dishes.
