- 2 c. mashed potatoes (leftover potatoes)
- 1 egg
- seasoning
- Crisco for pan frying
Directions

1Mix potatoes and slightly beaten egg together.

2Season to taste.

3Shape into round flat cakes about 3/4-inch thick.

4Melt enough Crisco into heavy frying pan to cover the bottom well. When hot, put cake in and brown on one side.

5Turn with spatula and brown cakes on the other side.
