- 1 medium onion, chopped
- 2 Tbsp. butter or margarine
- 2 eggs
- 1 1/2 c. mashed potatoes
- 1/4 c. all-purpose flour
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. water
Directions

1Saute onion in butter until tender.

2Remove from heat.

3In a bowl, lightly beat one egg.

4Add the onion, potatoes, flour, salt and pepper.

5Shape into patties (4 to 6).
-
6Place on a greased baking sheet.

7Lightly beat remaining egg; stir in water.
-
8Brush over potato cakes.
-
9Bake at 375° for 20 to 25 minutes.

10Eat topped with gravy.
