  • 2 lb. baking potatoes, cut in 1-inch dice
  • 8 oz. nonfat cream cheese
  • 1 c. plain nonfat yogurt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 2 Tbsp. diet margarine, melted
  • 1/2 tsp. paprika

Directions

    Place potatoes in a saucepan.

    Add water to cover and bring to a boil. Cover, reduce heat and simmer 20 minutes or until very tender. Drain. Combine potatoes, cream cheese, yogurt, garlic and salt in a bowl. Beat until smooth. Spoon into a 9 x 13-inch baking dish coated with Pam spray.

    Drizzle margarine over mixture. Sprinkle with paprika. Bake at 350° for 30 minutes.
