- 1 medium onion, chopped
- 1 lb. ground beef
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 can vegetable soup
- 4 medium potatoes
- 1 Tbsp. butter
- 1/3 to 1/4 c. milk
Directions

1Saute onion and ground beef until meat loses redness; season with 1 teaspoon salt and pepper.

2Place meat and onion mixture in 2-quart casserole dish; cover with soup.

3Cook potatoes until soft; mash with butter and milk.

4Season with remaining salt. Spoon mashed potatoes over meat mixture.

5Bake at 425° until bubbly.
